I use Citra to play pokemon games but I am changing my mac book.
Can I save my pokemon games in some format and load them on different Macs to continue where I got forward?
If can, then how should I work on it?

First make sure to have saved ingame normally, don’t use save states I’m not sure if they could be a problem.

To backup everything copy your Citras user folder which is located at ~/.local/share/citra-emu/ by default and move it to the same location on your new Mac.

You could as well backup each of your games save files individually. Right click the game in Citras game list choose Go to save location and backup the contents of that folder. On your new Mac start the game and let it create a new save file. Then go to the save location and replace the contents with those you backed up on your old Mac.

Thank you so so much for your information.
